Gluten intolerance also known as Celiac Disease is a discomfort in the gut affecting nearly 20,000,000 people or 7% of the US population. The cause of gluten intolerance in the small intestine is rejection of a protein called Gluten which is primarily found in grains; wheat, barley and rye.

The walls of the small intestine cannot absorb the nutrients in the gluten grain thus forcing the food mass to absorb water and float in the gut. The result maybe severe upset stomach, constipation, diarrhea, bloody stools and other abdominal discomforts. There is no test detection for gluten intolerance.

Fortunately, our body can fight gluten intolerance simply by preparing and ingesting foods free of the gluten protein. It has been scientifically determined that foods full in nutritional value and gluten free can be beneficial in helping to manage proper nutrient absorption and a healthy digestive system.

Wheat flour, Barley & Rye = Zero per day (Flours such as buckwheat, cornmeal, tapioca rice, coconut, millet and sorghum are permitted)

Protein = 25 grams average per meal

Monosaturated & Polyunsaturated Fats = 20 grams average per meal (low saturated animal fats)

Carbohydrates = 45 grams average per meal (only gluten free whole grains)

Dietary Fiber = 15 grams average per meal (gluten free)

Sugars = <10 grams average per meal

Cholesterol = <100 grams per meal

We focus on using fresh whole plant-based foods following a holistic approach common to the Mediterranean diet. Some of our meals permit non-GMO fish and shellfish, lean poultry, along with organic eggs and non-dairy product. We do not use red and other white meats, game, and fowl in our cookery. There is a minimal use of saturated fats, sugar, sodium and plenty of high fiber foods with a moderate caloric value as our preference to satisfy your dietary needs and culinary wishes. Principles from the Cornell University Center for Nutritional Studies are followed to transform a healthy body, mind and spirit.
